I processed chicken breast to make my own lean ground meat, but you could just buy pre-ground chicken for the meatballs instead.

  • Tomato sauce

    • whole peeled tomatoes
      800 g28 oz can

    • low-moisture mozzarella
      ~225 g1/2 lb
    • dried oregano

Method

Step 1: Simmer the sauce

Heat the oil in a saucepan over medium heat. Add the crushed garlic, grated onion, and oregano. for 30–45 seconds until fragrant.

Pour in the canned tomatoes. Bring to a gentle , partially cover with the lid slightly cracked, and simmer for about 1 hour.

Optional: blend until smooth before assembling the casserole.

Step 2: Boil the pasta

Meanwhile, the pasta in another pot with well-salted water until just al dente.

  • Slightly undercooking the pasta helps prevent it from becoming mushy during baking later.

Drain well and set aside (optionally toss with a drizzle of oil to prevent sticking).

Step 3: Prep the meatball mixture

Finely dice the bell pepper and onion. Add the chopped chicken, vegetables, salt, oregano, dried minced garlic, and Aleppo pepper to a food processor.

Pulse until the mixture forms a cohesive ground chicken mixture. At this point, you can form the mixture into balls, or just proceed to the following step for a faster, more rustic approach.

Step 4: Brown the meatballs

Heat a stainless steel skillet over medium-high heat and add the oil. Drop spoonfuls of the chicken mixture directly into the pan to .

the pieces well on the first side until the ‘meatballs’ naturally release, then flip each and finish cooking them through.

Add a splash of water to the pan to the browned bits into a quick pan sauce that should coat the meatballs, then remove from the heat and set aside.

Step 5: Assemble the casserole

Preheat the oven to 350°F/176°C.

Spread a thin layer of tomato sauce across the bottom of a baking dish. Add the cooked pasta, and nestle the chicken meatballs throughout the pasta.

Pour the remaining tomato sauce evenly over everything. Cover with the shredded mozzarella, and finish with another sprinkle of oregano and Aleppo pepper.

Step 6: Bake the pasta

for 25-35 minutes, uncovered, until the cheese has melted completely.

Switch the oven to for the last 1–2 minutes until the top is browned and bubbly. Allow to cool a bit before enjoying.
