Ground Chicken and Crispy Potato Bowl

This recipe came together at the end of a grocery week challenge, using the remaining chicken breasts and several prepared components from earlier meals, like pico, pickled onions, and yogurt sauce. Sub these with whatever condiments and sauces you have on hand.

I used a food processor to turn chicken breasts into my own lean, ground chicken, but you could just buy pre-ground chicken to simplify the process.

  • Crispy potatoes

    • russet potatoes

Method

Step 1: Parboil the potatoes

Dice the potatoes, then add them to a pot and cover with cold water. Add a sprinkle of salt, then bring the water to a .

Boil until the potatoes are mostly tender but still hold their shape, then drain thoroughly.

Step 2: Process the chicken

While the potatoes boil, cut the chicken breasts into chunks, then add them to a food processor with the cumin, ancho chili powder, and salt.

Pulse until the chicken forms a cohesive ground mixture, being careful not to overwork the meat (you don’t want it to become tacky).

Step 3: Crisp the potatoes

Transfer the drained potatoes to a metal bowl. Season with the garlic powder, smoked paprika, remaining salt, and oil. Toss until the potato cubes are evenly coated.

Transfer to an air fryer or preheated oven and at 400°F (205°C) for about 12–18 minutes, shaking once or twice, until deeply golden and crisp.

Step 4: Brown the chicken

Heat a large skillet over medium-high heat, and add a thin layer of oil. Add the chicken mixture and press it into one even layer across the pan to .

Leave it undisturbed briefly so the bottom begins to . Then, break the chicken apart with a spatula and continue searing until cooked through. Remove from the heat.

Step 5: Assemble the bowls

Divide the potatoes into two serving bowls, then top each with 250 g of ground chicken, 50 g of cheese, and 25 g of yogurt sauce. Garnish with lettuce, pico de gallo, and pickled onions, or other toppings of choice.
