Beefy Hummus Taco

Beefy hummus taco with a fresh tomato salad. I used up some leftover ground beef to make this ingredient inspired dish.

Ingredients

  • Beef & seasonings

    • ground beef
      ~ 113g1/4 lb
    • beef bouillon paste
      2 g
    • water
      2 spoonfuls
    • salt
      a sprinkle
    • za'atar
      a sprinkle
  • Tomato salad

    • cherry tomatoes
      , halved
      a handful
    • fresh dill
      , chopped
      a sprinkle
    • sumac
      a sprinkle
    • olive oil
      a drizzle
    • feta
      , crumbled
      to taste
  • Taco components

    • whole wheat tortilla
      2
    • hummus
      to taste

Method

Step 1: Brown the beef

Place a pan over medium high heat.

Add in the ground beef and smash it with your hand or a spatula into an even layer. Add a sprinkle of salt on top & let the beef brown for several minutes.

Once on the bottom, scrape it all up with a spatula and allow it to until cooked through. Add a sprinkle of za’atar to the beef.

Step 2: Prep the tomato salad

While the beef is browning, add the halved tomatoes to a bowl and toss with fresh dill, sumac, feta cheese and a bit of olive oil. Stir and set aside.

Step 3: Finish the beef

Add the bouillon and water to the beef mixture to . Stir until evenly coated, scraping up any browned bits on the bottom of the pan.

Step 4: Assemble the taco

Add a drizzle of olive oil to the tortillas & toast on a hot pan or griddle.

Add a spoonful of hummus to the warmed tortillas. Next add a scoop of the beef followed by the tomato salad. Serve & devour!
