
Hatch Chile Smash Burger
A great way to use up hatch chilies when they are in season.

This burger is why I love experimenting when cooking - I’ve never had a smash burger like this one. It’s spicy, cheesy, and beefy with a little bit of freshness from the sauce. The kewpie mayo adds the perfect umami as opposed to other mayo.

Ingredients
Burger components
- ground beef180 g1/3 lb
- roasted hatch chilies, chopped2
- american cheese1 slice
- brioche bun1
- cheddar, shreddeda handful
Sauce components
- kewpie mayo15 g
- cilantro, chopped5 g
- pickled daikon & carrots5 g
Method
Step 1: Prep the ingredients
Chop up the roasted hatch chilies, slice the cheddar cheese and break up the American cheese slice.
Mix together the cheeses along with the peppers and set aside.
Step 2: Sear the burger patties
Set a pan or griddle over high heat.
Split the ground beef in half and shape into patties. Place them on the pan or griddle and sprinkle with salt. Flip the patties over and smash the patties down as thin as possible with a spatula.
Allow the patties to for several minutes until on the bottom. Once browned, flip over the patty.
Top the burgers with the cheese & chile mixture. Allow the patties to continue browning and the cheese to melt.
Step 3: Make the sauce
Chop up the pickled daikon & carrots and cilantro.
Add the chopped ingredients to the mayo and mix together.
Step 4: Assemble & enjoy
Place the sauce on both buns.
Add the burger patties to the bun and close it up - enjoy!
